The central market in Riga was sometimes kind of strange: For example just before I left there we’re sooooo cheap avocados and tons of it everywhere. Although it was December and obviousely avocados don’t grow in Latvia. Same with limes. But as I was walking there and seeing all these fruits, I decided to do something with them. And I ended up with creativing a delicious cashew-lime-cake :)

Ingredients for one loaf pan:
250 g wheat flour
160 g cane sugar
4 limes
In the best case: a bit of the peel from an organic lime
1 tsp. baking soda (or one package baking powder)
1 tbsp. vinegar
150 ml oil
50 ml water
100 g cashew nuts

Mix the flour, cane sugar, baking soda, oil, water and vinegar in a bowl. After that squeeze the limes and add the lime juice to your bowl. If you have an organic lime, you can also use a bit of the peel and add it now. So you’ll taste the lime even more! Now break the cashew nuts or cut them once in the middle, so you won’t have to big pieces in your cake. Then mix them with the dough as well. Oil your form and fill in the dough. Heat the oven at 180°C and bake the cake for around 30 minutes until you’ll have a superdelicious cake :)

If you like, you can also top the cake with a lime frosting. Therefore just mix a lot of icing sugar with a little bit lime juice.
